A recipe designed to be enjoyed on it’s own or the star ingredient of your favorite broth-based soups. It not only warms the soul within, it’s also packed with nutrient boosting ingredients that work to increase your immunity, cleanse deeply, support gut health, and assist with a well-balanced microbiome.
The intention behind the Mineral Miracle Broth Recipe is to provide grounding and nurturance for whatever lies ahead, whether you’re on-the-go or need to slow down and take time for yourself.
MINERAL MIRACLE BROTH
Vegan, gluten free
Makes 8 quarts (8 32oz glass mason jar)
6 carrots, chopped
1 bunch celery, chopped
2 leek, chopped
2 sweet or yellow onions, quartered
1 sweet potato, 1 inch cubes
1 potato, 1 inch cubes
½ bunch flat-leaf parsley, roughly chopped
½ bunch thyme sprigs, whole
2 bay leaves
2 package of dried shiitake mushroom
1 (8in) strip kombu
1 bunch kale or other dark leafy green, roughly chopped
3 in fresh ginger, roughly chopped
8 teaspoons Cordyceps powder
2 teaspoons pink mountain sea salt (or Himalayaan sea salt)
Thoroughly wash all vegetables but do not peel them. Place all ingredients except the sea salt and cordyceps into the stockpot and cover with filtered water. Bring to a boil then reduce heat to simmer for at least 3 hours. Allow the broth to cool slightly.
Strain broth with a mesh strainer and pour into glass jars. Add 1 teaspoon cordyceps and ¼ teaspoon sea salt to each jar. Cover with lid and shake gently. Ready to enjoy!
For the remaining broth, allow cooling to room temperature before storing. If you prefer to freeze some or all of the broth, pour into large freezer bag (1 jar per bag for easy measurement).

Add 1 teaspoon ghee or coconut oil for healthy fatty acids boost
Add a dash of coconut amino or tamari for an umami enhancement
