Most of us find ourselves cooking more than normal during this unexpected pause in our lives and it’s a good time to try new recipes. In an effort to social distance, I’m making less trips to the store, so a few weeks ago I bought a beautiful 5-pound bag of locally grown, organic carrots knowing they would last me a few weeks. Carrots are rich in vitamin A, a powerful antioxidant, that helps support a healthy immune system.

This incredible carrot coconut soup is so simple and easy to make. Its full of flavor, slightly sweet, and creamy without any dairy. I garnished it with clover and radish sprouts, but it would be wonderful with cilantro or chives as well. Served with crusty bread, it makes a perfect, warm dinner for a chilly spring evening or a great course to serve on Easter.

Carrot Coconut Sou

Prep Time: 10 minutes
Cook Time: 20 minutes
Servings: 4
Vegan Friendly 

Ingredients

  • 4.5 cups of carrots
  • 1 medium onion
  • 5 cloves of garlic
  • 2 tsp of fresh grated ginger
  • 2 ¾ cups of vegetable broth
  • 1 2/3 cups of full-fat coconut milk
  • Juice of 1/ 2 lemon
  • 1 tsp salt
  • 1 tsp turmeric powder
  • 2 Tbsp of oil (coconut or avocado)
  • Fresh herbs & sprouts for garnish
  • Salt & pepper to taste

Method

Preheat the oven to 420 °F

Wash the carrots and cut them into small pieces. If possible, do not peel so that no valuable vitamins are lost. Peel the onion and cut into 1-inch cubes.

Place the vegetables on a sheet pan and drizzle with 1 Tablespoon of oil and roast for about 20 minutes until slightly brow, turning once half way through.

Peel and chop the garlic. Heat the remaining 1 Tablespoon of oil in a large pot over medium heat. Toss in the garlic and sauté for 1 minute. Add the turmeric and ginger and toss until fragrant (about 30 seconds).

Add in the vegetable broth, lemon juice, salt, roasted vegetables and coconut milk to the pot. Let simmer for about 5 minutes.

Remove from heat and puree until smooth with a blender or immersion blender.

Garnish with fresh herbs, season to taste and enjoy!

What is Full Spectrum CBD?

Full spectrum CBD is considered a whole plant formula. It’s derived from the flowers and leaves of the hemp plant. It contains high amounts CBD and trace amounts of other cannabinoids, including THC, along with other elements of the hemp plant including naturally-occurring terpenes, vitamins, minerals, fatty acids and proteins. A mocktail should be well-balanced just as a cocktail should be. Instead of spirits, the base could be flavored seltzer, club soda, or fruit juice. In this mocktail we are using kombucha, a fermented tea that is low in sugar and contains gut healthy probiotics. The fermented flavor of kombucha is reminiscent of beer or wine so you’ll feel like you’re sipping on the real thing, except it’s healthy, and it will keep you on track for dry January. Ditching alcohol has never been so delicious.

Straberry Mojito Mocktail

Yields 2 Mocktails

Ingredients

  • 4 mint leaves, stems removed
  • ¾ cup of fresh strawberries, stems removed and sliced
  • 2 Tbsp Lime juice
  • 4 oz. of sparkling water or club soda
  • 12 oz. of kombucha (I used GT’s Original) 
  • 1 cup ice
  • Berries and mint for garnish

Method

In a small bowl, muddle the mint, strawberries and lime juice until it forms a puree. This step can also be done in a food processor or blender.

Divide the puree among 2 cocktail glasses

Add 6 ounces of kombucha and 2 ounces of sparkling water per glass. Fill the rest with ice.

Stir, sip and enjoy!

Claire De Lune’s ethereal apartment feels like a secret hideaway in the hills of LA’s Montecito Heights neighborhood. Walking through her lush garden, it’s not hard to imagine the singer/songwriter working from home. As a front-woman of the band Tiny Deaths, De Lune has built a career on her incredible skill as a lyricist and her infallible ability to imagine what’s possible.

BLNCD: You just returned from a tour in Europe! What were some highlights from that experience? 

CDL: So many highlights! Europe is amazing. One of the coolest moments was meeting a polaroid photographer who lived in Cologne, Germany who had been a fan of my music for a long time, and getting to do a photoshoot with her between the soundcheck and our set. Pretty mind blowing to think that songs I wrote in my bedroom made it across the world before I did! 

BLNCD: How would you describe the pocket of the music industry where you feel the most authentic? 

CDL: I really prioritize working with good people nowadays more than anything else. People with big hearts who work hard and do things the right way— making art because they love it, and above all being kind to others. It’s cool to meet artists you admire and work with people with big long resumes in the industry, but if they’re not kind and genuine people I’m not really interested.

BLNCD: Your album, “Magic,” was celebrated for its dreamy electropop vibes, but there’s a lot of heart and soul there too. If you were to pick one track off the album to perform for the rest of your life, which would it be? 

CDL: Definitely the title track. That’s a song that I think I had been trying to write my whole life in some way or another, and it never came out right until that song. To this day I think it’s my favorite thing I’ve written. 

BLNCD: As a songwriter, how do you get your creative juices flowing? Are there particular environments or conditions that help you focus creatively? 

CDL: I write really well when I’m out of my element in some way— either traveling to someplace far away, or even in a car or something. I think it just shakes things up and kicks the dust off my brain. I also find myself getting inspired really late at night– like 2, 3 in the morning. I’ve been woken up with a song idea on more than one occasion!

BLNCD: Recently, your musical collaborations have landed sync deals on TV shows like Charmed and Netflix’s Atypical.  What’s it like hearing your voice and music as an underscore for stories on television? 

CDL: It’s surreal! I’m always so honored that someone else who was making their own art wanted to incorporate mine into it in some way. I write songs with moments/feelings in mind and I love thinking of them as soundtracks– either to a movie or to a day in someone’s life. Being a soundtrack to someone’s life— That’s the highest compliment.

BLNCD: How do you feel your own approach to the industry has changed the most in the past two or three years?

CDL: I think I started embracing this idea that maybe my life won’t look exactly how I pictured it, but if I’m making a living doing what I love, which is writing songs and performing them, then I feel like I’m on the right track in some way. A music career isn’t one size fits all. It’s not going to look the same for everyone. I’m just trying to create a life I want to live— to fill my days with as much joy and fulfillment as possible and to surround myself with people who push me to grow and support me and make me better. I feel like I’m finally starting to have that at the moment and it feels amazing.  

BLNCD: Having started your career in MN, do you still feel a unique relationship to shows back “home?”

CDL: 100%! Minneapolis will always be home, even though I wasn’t born there and I don’t live there anymore. People in Minneapolis also just love music and art and it’s a great place to play for any touring artist too, I think.

BLNCD: Have you incorporated CBD products into your lifestyle? 

CDL: As someone with generalized anxiety disorder, CBD has been a godsend in my life— it’s truly one of the only things I’ve found effective in calming my mind and helping me rest. I’m excited to see how I can incorporate it even more, like into my skin and body care routine! 

BLNCD: What sort of musical endeavors can we look forward to seeing from you in 2020? 

CDL: Definitely new tiny deaths stuff! And more new music under some other names that I can’t talk about yet.. Hopefully lots of songs being written for all sorts of purposes, I’ve been really inspired recently and writing constantly!

7 Facts About MMA Champ Maurice Greene

He’s a family man. A proud father of two, Greene prioritizes time with his family when he’s not in the ring and is often known to shout out his kids and fiancée during his post-fight interviews. And his favorite fight memory?  “My first full fight camp at Factory X Muay Thai and the first time my son watched me live.”

He’s amazing at crochet. With a surprising nickname and an Instagram feed full of homemade hats, Greene boasts his crochet skills as much as his fighting skills.  “I named myself “The Crochet Boss” because it was a way to give the MMA world a sense of my creative mind.  Also, I make the best hat on the market. #TheCrochetBoss” Greene is even interested in launching a more formal branded fashion line in 2020, often sharing his interest in “making the world warmer, one head at a time.”

His father inspires him the most.  As a family man, Greene learned from the best, “My Dad has worked hard for forty years now, twenty years as a Navy SeaBee and nearly twenty on the railroad. I’m inspired by his work ethic, even though I learned how to work hard in a different way, he’s the foundation.”

He started taking MMA seriously from the jump. I started MMA at twenty-four years old and got offered to fight in thirty days.  At first it was just a ‘why not’ thing, but once I knew that I had a son on the way, and didn’t want to go back to school, I made the decision.”

He’s dabbled in reality television. In 2018, Greene stirred up some drama on the Fox Sports 1 reality show “The Ultimate Fighter.” The show features professional MMA fighters living together in Las Vegas, Nevada, and follows them as they train and compete against each other for a prized contract with the UFC. Greene was also unafraid to have some “villain” moments, “They told us to be ourselves and I think the general public got the good the bad and the ugly. They got a little bit of everything from me, where they didn’t get a whole lot of the other cast, hence the reason why I’ve been pretty much on every episode. Sometimes good publicity, bad publicity, it’s still people talking about you. So that’s a good thing.”

As we know, staying calm during the holidays is no easy task. With lots on everyone’s to-do list, we came up with a few simple daily rituals to help you through this busy time of year. Quite simply, finding moments of wellness are essential. Whether it be in your car before or after the grocery store or during a holiday gathering, there is always a moment just for you. Don’t forget to breathe and remember these simple tips: 

Create Your Space // Your time alone at home is your crème de la crème. As tempting as it may be to crash onto the couch, the moment you get through the door, give yourself a little more support. Light beeswax candles, burn sweetgrass incense, and play soothing music like Laraaji – an amazing ambient artist – or your favorite holiday tunes to add a little sparkle.  Take the time to prepare your home for the vibration that will best support you with your favorite lighting, aromas and music. Taking the time, when you can be with yourself alone will purify and uplift you, reminding you that the holidays are about light and love. Time with self will better prepare you for when you do commune with those near and dear to you. With the home and hearth feeling good, you’ll be able to wrap gifts, bake cookies and just relax. Moments of hands-on active self-care – just for you – is also absolutely essential.  

Move & Groove // Take a walk or even get to a yoga or movement class. Allowing the blood to flow and muscles feeling warm will assist the nervous system to feel comforted and the lymphatic system to purify chemicals from stress or from sugar after the extra coconut macaroon. Not to mention the endorphins or brightening response the brain receives with enhanced movements outside the normal daily flow. 

Meditate // Try practicing a grounding meditation, daily if possible, where you sit on a cushion or directly on the floor in a comfortable position and simply draw your inner awareness to your seat, the space where you connect, and breathe deeply into the abdomen. The deeper and slower the breath, the more soothing it will be for a pleasant adjustment. Allow the mind to rest, trust that thoughts – which are important – will return. Try not to get distracted and rush to pick up a pen. Allowing thoughts or feeling to move through without attachment. Know that some discomfort may arise and that’s ok! Whatever is coming up is doing so to be released and try not to analyze why this may be or what it may be about. Simply return awareness to the breath. 

Soak in the Tub // Take the time to draw a warm bath for full body or even just to soak the feet. Add Epsom or deep sea salts full of soothing magnesium. Gently massage your full body or the feet with a warm oil to cue the body it’s time to restore.
